Nam Prik Dang (red Chili Sauce) 40 Chilies, red; fresh -- chopped
8 Garlic cloves -- crushed
4 tb Sugar -- brown
4 tb Fish sauce (Nam Pla)
1/2 c Lime juice -- fresh
In a blender, grind all ingredients to a smooth sauce. Put in tightly closed jar and refrigerate.
Tamarind liquid may be substituted for the lime juice.
