No Name Chili 1 lb Round steak; chili grind
1 lb Ground chuck
8 oz Tomato sauce
2 c Water
1/4 c Ground and dried #6 New Mexico chili
1/2 ts Garlic; minced
1 tb Onion; chopped
1 1/4 tb Paprika
1 1/4 tb Salt
1 1/2 tb Ground cumin; divided
1 tb Cayenne pepper
Nesa Harina
3/4 lb Goat cheese; grated
Lime; fresh juice of
Combine first 9 ingredients and 1 tablespoon cumin in a large pot
and simmer 1 hour. Add 1 tablespoon cayenne pepper and simmer
another hour. Add masa paste made with water to tighten liquid. Add
cheese and the remaining 1/2 tablespoon cumin. Cook for 30 minutes.
Add juice of fresh lime. Serve.
