Green Garlic Chili 2 lb Beef use any desired cuts
1/2 c Olive oil
3 Bulbs fresh garlic
6 Fresh green chiles
1/2 t Salt
1/2 t White pepper
1 lg Onion
3 lg Green tomatoes
Cut beef into slices or 1/2 inch cubes. Heat oil in skillet and cook
beef until well-done and tender. Separate bulbs into cloves and
peel. Place whole cloves in skillet and cook until tender. Add green
chiles and onions. Dice green tomatoes and add to skillet. Add the
remainder of the seasonings and cook, covered to retain as much juice
as possible.
