Just Chili Recipes



 

Chicken or White Chili

1 pound ground chicken or turkey breast
2 tablespoons plus 2 teaspoons chili powder
1 tablespoon ground cumin
1 teaspoon sweet Hungarian paprika
1/2 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/4 teaspoon freshly ground pepper
1 7-ounce can diced green chiles
1 16-ounce package dried small white beans, rinsed, drained and picked over
4 cups very hot water
2 medium onions, chopped

Crumble the chicken or turkey into a large, hot skillet. Cook over medium-high heat, stirring often, until cooked through, 7 to 10 minutes. Drain off any liquid.

Turn into a 4-quart electric slow cooker. Add chili powder, cumin, paprika, garlic powder, salt and pepper. Mix well. Stir in the green chiles, beans, water and onions. Cover and cook on the high setting for 1 hour.

Reduce the setting to low and continue cooking for 8 to 9 hours, or until the beans are tender. Makes 6 to 8 servings.
