White Chili 1 pound Great Northern Beans, soaked
1 1/2 t cayenne pepper
1 medium onion chopped
1/2 t salt
3 cloves garlic, minced
2 lbs boneless, skinless chicken breasts (4 breasts)
2 4 oz cans green chilies
1 14 1/2 oz can chicken broth (red. sodium)
2 t ground cumin
1 cup water
1 t oregano
Put beans in medium pan and cover with water. Bring to boil, reduce heat and simmer 20 minutes. Discard water. Cut chicken into 1 inch pieces, brown if desired. Put all ingredients into slow cooker. Stir to mix thoroughly. Cover, cook on low 10-12 hours or High 5-6 hours. 6-8 servings.
