Zippy White Chili

1 lb dried white beans (great northern or navy)
6 cups fat free chicken broth
2 cloves fresh minced garlic
2 medium onions, chopped and divided in half
1 T olive oil
4 oz canned, diced green chilies
2 t ground cumin
2 t oregano
1/4 t cayenne pepper
1 lb cooked poultry, diced (optional)
8 oz shredded colby/jack cheese
2T parsley flakes

Soak beans overnight in water to cover. drain. Combine beans, broth, garlic, and half of onion in 6 qt dutch oven and bring to a boil. reduce heat to simmer, cover, and cook 2-3 hours or until beans are very tender. Saute remaining onion and oil in 1 qt sauce pan until onion is tender. add to beans with remaining spices and chicken, if desired. Simmer 30 minutes longer. Add cheese and parsley.

makes 8-10 servings.
